Ingredients
  • 4 Large ripe tomatoes
  • 5 oz Canned tuna in olive oil, drained
  • 1/4 cup Kalamata olives, pitted and chopped
  • 2 tablespoons Capers, drained
  • 1/4 cup Red onion, finely chopped
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Fresh basil, chopped
  • 2 tablespoons Olive oil
  • 1 tablespoon Lemon juice

Prepare the Tomatoes

Cut off the tops of the tomatoes and carefully scoop out the pulp, leaving a hollow shell. Reserve the tomato pulp for another use (such as making sauce or adding to a salad), or discard.

In a medium bowl, flake the drained tuna with a fork. Add the chopped Kalamata olives, capers, red onion, parsley, and basil.

Dress the Filling

Spoon the tuna mixture into the hollowed-out tomatoes, packing them lightly.
