Light and fluffy Keto Cloud Eggs served with crispy bacon and creamy avocado. A delicious and satisfying keto breakfast that's easy to make and packed with healthy fats.
Ingredients
- 3 Eggs
- 2 slices Bacon
- 1/4 Avocado
- 1 tablespoon Cream Cheese
- to taste Salt
- to taste Pepper
- 1 tablespoon, chopped Chives (optional)
Preparing the Bacon
Preheat your oven to 400°F (200°C). Place bacon slices on a baking sheet lined with parchment paper. Bake for 10-15 minutes, or until crispy. Remove from oven and set aside.
Preparing the Egg Whites
Separate the egg whites from the yolks. Place the egg whites in a clean, dry mixing bowl. Add cream cheese and a pinch of salt and pepper. Using an electric mixer, beat the egg whites until stiff peaks form. Be careful not to overwhip.
Baking the Cloud Eggs
Line a baking sheet with parchment paper. Gently scoop the whipped egg whites onto the prepared baking sheet, forming a small nest in the center of each cloud. Bake for 3 minutes. Remove from oven and carefully place an egg yolk in the center of each nest. Bake for another 3-5 minutes, or until the yolks are set to your liking.
Serving
While the eggs are baking, mash the avocado with a fork and season with salt and pepper. Once the cloud eggs are ready, remove them from the oven and let them cool slightly. Place the cloud eggs on a plate, top with crispy bacon, mashed avocado, and chopped chives (if using). Serve immediately.

FAQ
-
Can I use a different type of cheese?
Yes, you can substitute the cream cheese with other soft cheeses like goat cheese or mascarpone. However, the texture and flavor will be slightly different. -
Can I prepare the egg whites ahead of time?
It is best to prepare the egg whites right before baking as they can deflate if left to sit for too long. -
How do I know when the egg yolks are done?
The egg yolks should be set to your liking. For a runny yolk, bake for less time. For a more solid yolk, bake for a little longer.
