Ingredients
  • 2 cans (13.5 oz each), refrigerated overnight Full-Fat Coconut Milk
  • 1/2 cup (adjust to taste) Erythritol or Monk Fruit Sweetener
  • 1 teaspoon Vanilla Extract
  • 1 pinch Pinch of Salt

Refrigerate Coconut Milk

Place the cans of full-fat coconut milk in the refrigerator overnight. This will allow the coconut cream to separate from the watery liquid.

Separate the Cream

Carefully open the cans of coconut milk, being careful not to shake them. Scoop out the thick, solidified coconut cream from the top, leaving the watery liquid behind. Discard the watery liquid or save it for smoothies.

Blend the Ingredients

In a blender or food processor, combine the coconut cream, sweetener, vanilla extract, and salt. Blend until smooth and creamy.

Churn (Recommended)

Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions (usually 20-30 minutes).

Freeze to Harden

Transfer the churned ice cream to a freezer-safe container and freeze for at least 2 hours to harden further.

Serve

Scoop the coconut milk ice cream into bowls and enjoy! It can be enjoyed plain or with low-carb toppings.

Other Important Considerations for Nutrition

  • Coconut Milk: Use full-fat coconut milk for the best texture and flavor. Refrigerating it is crucial for separating the cream.
  • Sweetener: Adjust the sweetener to your liking. Liquid sweeteners may affect the texture slightly.
  • Add-ins: Feel free to add low-carb flavorings like cocoa powder, extracts (mint, almond), or sugar-free chocolate chips after churning.

FAQ

  • Can I use light coconut milk?

It's not recommended. Light coconut milk has a lower fat content, which will result in a less creamy and more icy ice cream.
  • What if my ice cream is too hard?

Let it sit at room temperature for 10-15 minutes before scooping to soften it slightly.
