Spinach and Feta Omelette
A classic and flavorful omelette filled with fresh spinach and salty feta cheese. Perfect for a quick and satisfying vegetarian breakfast or brunch.
Ingredients
- 3 Eggs
- 2 cups Fresh Spinach
- 1/4 cup Feta Cheese
- 1 tablespoon Olive Oil
- to taste Salt
- to taste Black Pepper
Prepare the Spinach
Wash the spinach thoroughly to remove any dirt or grit. You can use baby spinach or regular spinach, but make sure to chop larger leaves into smaller pieces. If using frozen spinach, thaw it completely and squeeze out any excess water. This prevents a soggy omelette.
Sauté the Spinach
Heat the olive oil in a non-stick skillet over medium heat. Add the spinach and sauté for 2-3 minutes, or until it wilts and reduces in volume. Season with a pinch of salt and pepper. Remove the spinach from the skillet and set aside.
Prepare the Eggs
In a bowl, whisk the eggs together with a fork or whisk until light and frothy. Season with salt and pepper to taste. Don't over-whisk, as this can make the omelette tough.
Cook the Omelette
Return the skillet to medium heat and add a little more olive oil if needed. Pour the egg mixture into the skillet. Let it cook for a minute or two, until the bottom starts to set but the top is still slightly wet. Gently lift the edges of the omelette with a spatula to allow the uncooked egg to flow underneath. This will ensure even cooking.
Add the Filling
Once the omelette is mostly set but still slightly soft, sprinkle the sautéed spinach and crumbled feta cheese over one half of the omelette. Avoid overfilling to ensure the omelette folds easily.
Fold and Finish
Carefully fold the other half of the omelette over the filling. Cook for another minute or two, until the cheese is melted and the omelette is heated through. Be careful not to overcook the omelette, as it will become dry and rubbery.
Serve
Slide the omelette onto a plate and serve immediately. Garnish with a sprinkle of fresh parsley or a side of toast, if desired. Enjoy!
