Berry Burst Granola Parfait
A delightful and nutritious breakfast parfait featuring layers of crunchy homemade granola, creamy Greek yogurt, and a vibrant mix of fresh berries. This parfait is not only delicious but also packed with protein, fiber, and antioxidants to kickstart your day.
Ingredients
- 1 cup Homemade Granola (see recipe below or use store-bought)
- 1 1/2 cups Greek Yogurt (plain or vanilla)
- 1/2 cup Fresh Strawberries
- 1/2 cup Fresh Blueberries
- 1/4 cup Fresh Raspberries
- 1-2 tablespoons Honey or Maple Syrup (optional)
- 1 teaspoon Chia Seeds (optional)
Layering the Parfait
In a glass or bowl, start with a layer of granola at the bottom. This provides a crunchy base for the other ingredients.
Adding the Yogurt
Spoon a layer of Greek yogurt over the granola. Spread it evenly to cover the granola layer.
Berry Bliss
Arrange a mix of fresh strawberries, blueberries, and raspberries over the yogurt layer. Feel free to use any combination of berries you enjoy.
Repeat and Customize
Repeat the layers – granola, yogurt, berries – until the glass or bowl is full. For an extra touch of sweetness, drizzle honey or maple syrup over the top layer of berries. Sprinkle chia seeds for added nutrition (optional).
Serving and Enjoying
Serve immediately and enjoy! The parfait is best enjoyed fresh to maintain the crunchiness of the granola. This can also be prepared an hour ahead and stored in the fridge. Keep in mind, that granola may become soft if stored for longer periods of time.
Homemade Granola Recipe (Yields approx. 4 cups)
Ingredients: 3 cups rolled oats, 1 cup mixed nuts (almonds, pecans, walnuts), roughly chopped, 1/2 cup seeds (pumpkin, sunflower, flax), 1/4 cup shredded coconut (optional), 1/2 cup honey or maple syrup, 1/4 cup coconut oil or olive oil, melted, 1 teaspoon vanilla extract, 1/2 teaspoon cinnamon, 1/4 teaspoon salt.
Instructions: Preheat oven to 300°F (150°C). In a large bowl, combine the rolled oats, nuts, seeds, and coconut (if using). In a separate bowl, whisk together the honey or maple syrup, melted coconut oil or olive oil, vanilla extract, cinnamon, and salt. Pour the wet ingredients over the dry ingredients and mix well to coat evenly. Spread the mixture in a thin, even layer on a large baking sheet lined with parchment paper. Bake for 30-40 minutes, stirring halfway through, until golden brown and fragrant. Let the granola cool completely on the baking sheet before breaking it into clusters. Store in an airtight container at room temperature for up to 2 weeks.
