Quick Peanut Tofu Stir-Fry
A delicious and satisfying vegetarian meal ready in just 10 minutes! This peanut tofu stir-fry is packed with flavor and comes together in a snap.
Ingredients
- 250 g Firm Tofu
- 1 cup Broccoli Florets
- 2 tbsp Peanut Butter
- 2 tbsp Soy Sauce
- 1 tbsp Rice Vinegar
- 1 tsp Honey or Maple Syrup
- to taste Sriracha (optional)
- 1 tsp Sesame Oil
Prepare the Tofu
Press the tofu to remove excess water. Cut into cubes and set aside.
Make the Peanut Sauce
In a small bowl, whisk together peanut butter, soy sauce, rice vinegar, honey (or maple syrup), and sriracha (if using). Add a little water if the sauce is too thick.
Stir-Fry
Heat sesame oil in a wok or large frying pan over medium-high heat. Add the tofu and stir-fry until lightly browned, about 3-4 minutes.
Add Broccoli
Add the broccoli florets to the pan and stir-fry for another 2-3 minutes, until slightly tender-crisp.
Combine and Serve
Pour the peanut sauce over the tofu and broccoli. Stir-fry for another minute, until everything is well coated and heated through. Serve immediately over rice or quinoa.
