Jeweled Citrus and Pomegranate Salad
A refreshing and vibrant salad bursting with the flavors of winter citrus and sweet pomegranate seeds. Perfect as a light appetizer or a colorful side dish.
Ingredients
- 3 Oranges (various types, such as navel, Cara Cara, blood orange)
- 1 Grapefruit (pink or ruby red)
- 1 Pomegranate
- 1/4 Red onion
- 1/4 cup Fresh mint leaves
- 2 tablespoons Extra virgin olive oil
- 1 tablespoon Lemon juice
- 1 teaspoon Honey
- to taste Salt
- to taste Black pepper
Prepare the Citrus
Carefully peel all the oranges and grapefruit, removing as much of the white pith as possible. Segment the citrus fruits over a bowl to catch any juice. Set the juice aside, it will be used in the dressing.
Prepare the Pomegranate
Cut the pomegranate in half and remove the seeds. A helpful trick is to hold the pomegranate half, cut-side down, over a bowl and firmly tap the back of the pomegranate with a wooden spoon to dislodge the seeds.
Prepare the Red Onion and Mint
Thinly slice the red onion. Soak the sliced red onion in cold water for 5-10 minutes to mellow its flavor. Drain well. Roughly chop the fresh mint leaves.
Make the Dressing
In a small bowl, whisk together the reserved citrus juice, olive oil, lemon juice, and honey. Season with salt and pepper to taste.
Assemble the Salad
In a large bowl, gently combine the citrus segments, pomegranate seeds, red onion, and mint. Drizzle the dressing over the salad and toss gently to coat. Taste and adjust seasoning as needed.
Serve
Serve the salad immediately or chill for later. The flavors will meld together as it sits. Garnish with extra mint leaves, if desired.
