White Bean and Roasted Red Pepper Bruschetta
A delicious and vibrant bruschetta featuring creamy white beans, sweet roasted red peppers, and a hint of lemon. An elegant and flavorful appetizer.
Ingredients
- 1 15-ounce can, rinsed and drained Canned cannellini beans
- 1 jarred, drained and chopped Roasted red peppers
- 1 clove, minced Garlic
- 1 tablespoon Lemon juice
- 2 tablespoons Extra virgin olive oil
- 2 tablespoons, chopped Fresh parsley
- 1/4 teaspoon Salt
- 1/4 teaspoon Black pepper
- 1 loaf Baguette or Italian bread
Prepare the White Bean Mixture
In a medium-sized bowl, combine the rinsed and drained cannellini beans, chopped roasted red peppers, minced garlic, lemon juice, olive oil, and chopped fresh parsley. Mash the mixture slightly with a fork to create a creamy texture, but leave some beans whole for added texture. Season with salt and pepper to taste. Mix well and let the flavors meld for about 10 minutes.
Toast the Bread
Slice the baguette or Italian bread into 1/2-inch thick slices. Brush the slices lightly with olive oil. Preheat a grill pan, oven broiler, or toaster oven. Toast the bread slices until they are golden brown and slightly crispy. Be careful not to burn them.
Assemble the Bruschetta
Once the bread slices are toasted, spoon the white bean and roasted red pepper mixture generously onto each slice. Spread the mixture evenly across the bread.
Serve Immediately
Serve the bruschetta immediately while the bread is still warm and crispy. You can garnish with a drizzle of olive oil and a sprinkle of fresh parsley for added flavor and visual appeal.
