Chicken Liver Pâté Crostini with Fig Jam
An elegant and flavorful appetizer featuring creamy chicken liver pâté spread on toasted baguette slices, topped with a touch of sweet fig jam.
Ingredients
- 500 g Chicken livers
- 100 g Butter
- 2 Shallots
- 2 Garlic cloves
- 50 ml Dry sherry
- 2 sprigs Fresh thyme
- 1 Baguette
- 100 g Fig jam
- to taste Salt
- to taste Black pepper
Prepare the Chicken Livers
Thoroughly rinse the chicken livers under cold water. Pat them dry with paper towels and remove any visible connective tissue. Cut into smaller pieces for even cooking.
Sauté Aromatics
Melt 50g of butter in a skillet over medium heat. Add finely chopped shallots and minced garlic. Sauté until softened and fragrant, about 3-5 minutes.
Cook the Pâté
Add the chicken livers to the skillet and cook until browned on all sides and cooked through, about 8-10 minutes. Be careful not to overcook, as this will make the pâté dry.
Deglaze and Simmer
Pour in the dry sherry to deglaze the pan, scraping up any browned bits from the bottom. Add the fresh thyme sprigs. Reduce heat to low, cover, and simmer for 10 minutes.
Blend the Pâté
Remove from heat and discard the thyme sprigs. Transfer the mixture to a food processor. Add the remaining 50g of butter, salt, and pepper. Process until smooth and creamy. Taste and adjust seasoning as needed.
Chill the Pâté
Spoon the pâté into a bowl or ramekin. Cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming. Refrigerate for at least 2 hours to allow the pâté to firm up.
Prepare the Crostini
Preheat oven to 180°C (350°F). Slice the baguette into thin rounds. Brush both sides of the baguette slices with olive oil and bake for 8-10 minutes, or until golden brown and crispy.
Assemble the Crostini
Spread a generous amount of chilled chicken liver pâté onto each crostini. Top with a small dollop of fig jam.
Serve
Arrange the crostini on a platter and serve immediately. Garnish with fresh thyme sprigs, if desired.
