Ingredients
- 1 cup All-purpose flour
- 1 cup Shredded sharp cheddar cheese
- 1/4 cup Butter
- 2 tablespoons Fresh chives
- 3-4 tablespoons Ice water
- 1/4 teaspoon Salt
- 1/4 teaspoon Black pepper
Combining Dry Ingredients
In a food processor, combine the flour, salt, and pepper. Pulse a few times to mix.
Adding Butter and Cheese
Add the cold, cubed butter and shredded cheddar cheese to the food processor. Pulse until the mixture resembles coarse crumbs.
Adding Chives and Water
Add the chopped chives and gradually add the ice water, one tablespoon at a time, pulsing until the dough just comes together. Be careful not to overmix.
Shaping and Chilling
Turn the dough out onto a lightly floured surface and gently form it into a disc. Wrap in plastic wrap and chill in the refrigerator for at least 30 minutes.
Rolling and Cutting

Baking
Transfer the crackers to the prepared baking sheet. Prick each cracker with a fork. Bake for 10-12 minutes, or until the edges are golden brown.
Cooling and Serving
Let the crackers cool completely on the baking sheet before serving. Store in an airtight container at room temperature for up to 5 days.

FAQ
-
Can I use different herbs?
Yes, you can substitute chives with other herbs like thyme, parsley, or dill. -
Can I make these crackers without a food processor?
Yes, you can make them by hand. Use a pastry blender or your fingertips to cut the butter and cheese into the flour until the mixture resembles coarse crumbs. Then, proceed with adding the chives and water. -
Why is it important to chill the dough?
Chilling the dough allows the gluten to relax and prevents the crackers from shrinking during baking. It also helps the butter to stay cold, which results in a flakier cracker.
