Preparing the Cauliflower Mash
Steam or boil the cauliflower florets until tender, about 15-20 minutes. Drain well. In a food processor or with a potato masher, mash the cauliflower until smooth. Add plant based milk, nutmeg, salt, and pepper to taste. Set aside.
Cooking the Vegetable and Bean Filling
Heat the olive oil in a large skillet or Dutch oven over medium heat. Add the onion, carrots, and celery and cook until softened, about 5-7 minutes. Add the garlic and cook for another minute until fragrant.
Adding the Remaining Filling Ingredients
Stir in the vegetable broth, red lentils, diced tomatoes, kidney beans, tomato paste, Worcestershire sauce, thyme, and oregano. Bring to a simmer, then reduce heat and cook for 20-25 minutes, or until the lentils are tender and the sauce has thickened. Stir in the frozen peas during the last few minutes of cooking.
Assembling the Cottage Pie
Preheat oven to 375°F (190°C). Pour the vegetable and bean mixture into a 9x13 inch baking dish. Spread the cauliflower mash evenly over the top.
Baking the Cottage Pie
Bake for 20-25 minutes, or until the cauliflower topping is lightly golden brown and the filling is bubbly. Let cool for a few minutes before serving. Enjoy!
