  • 2 medium, chopped Carrot
  • 2 stalks, chopped Celery
  • 1 medium, chopped Parsnip
  • 4 cloves, minced Garlic
  • 1/2 cup Dry red wine
  • 28 oz Canned crushed tomatoes
  • 2 tbsp Tomato paste
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 1 cup Chicken broth

  • 1 lb Pappardelle or other pasta
  • to serve Grated Parmesan cheese

Browning the Turkey

Heat olive oil in a large pot or Dutch oven over medium heat. Add the ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess fat.

Sautéing the Vegetables

Add the chopped onion, carrot, celery, and parsnip to the pot and cook until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.

Adding the Sauce Ingredients

Pour in the dry red wine and deglaze the pot, scraping up any browned bits from the bottom. Add the crushed tomatoes, tomato paste, dried oregano, and dried basil. Stir well to combine.

Simmering the Ragu

Pour in the chicken broth. Bring to a simmer, then reduce the heat to low, cover, and cook for 1-1.5 hours, or until the vegetables are tender and the sauce has thickened. Season with salt and pepper to taste.

Serving

Cook the pappardelle or other pasta according to package directions. Drain the pasta and add it to the pot with the turkey ragu. Toss to coat. Serve immediately, topped with grated Parmesan cheese.
