Ingredients
- 3 1/2 cups All-purpose flour
- 2 1/4 teaspoons Instant dry yeast
- 1 1/2 teaspoons Salt
- 1 teaspoon Sugar
- 1 1/2 cups Warm water
- 2 tablespoons Olive oil
Mixing the Dough
In a large bowl, combine the flour, instant yeast, salt, and sugar. Add the warm water and olive oil. Mix until a shaggy dough forms. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic. If the dough is too sticky, add a little flour, one tablespoon at a time.
First Rise
Place the dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1-1.5 hours, or until doubled in size.
Dividing and Shaping
Punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball. Cover the balls with a damp cloth and let them rest for 10 minutes.
Rolling Out the Pitas
On a lightly floured surface, roll each ball into a circle about 6-7 inches in diameter and about 1/8 inch thick. Be careful not to roll them too thin, or they won't puff up properly.
Second Rise
Place the rolled-out pitas on a baking sheet lined with parchment paper. Cover them with a damp cloth and let them rest for 20-30 minutes.
Baking the Pitas
Preheat your oven to 450°F (232°C) with a baking stone or baking sheet inside. Carefully transfer the pitas (2-3 at a time depending on the size of your stone/sheet) onto the hot baking stone or baking sheet. Bake for 5-7 minutes, or until the pitas puff up. Remove from the oven and wrap in a clean kitchen towel to keep them soft.
Serving
Serve the pita bread warm with your favorite fillings, dips, or alongside meals. They are best enjoyed fresh!

Why didn't my pita bread puff up?
